If you are looking for a rare sparkling wine that tells the story of a single place, a single grape, and a single year, the 2015 is an opportunity not to be missed.

The maison was born from the intuition of Eugène-Aimé Salon, who at the beginning of the twentieth century decided to produce a single wine: a vintage Blanc de Blancs, obtained only from Chardonnay from Le Mesnil-sur-Oger, a Grand Cru village in the heart of the Côte des Blancs. The first vintage was 1905, and since then Salon has been released only in years deemed truly worthy: the 2015 is just the forty-fifth vintage in over one hundred and twenty years of history. The grapes come from the historic plots chosen by the founder, on soils of craie—the white limestone of Champagne—which gives the wine verticality and an unmistakable savoriness.

The 2015 was a dry and sunny vintage, with a hot summer that led to very ripe grapes. The wine rested on the lees for a long time, nearly a decade, before disgorgement in the spring of 2025 with a dosage of 6 grams per liter. There is also an interesting fact that says a lot: unusually, the house chose to release the 2015 before the 2014, a sign that this vintage was already ready to tell its story.

In the glass, it shines with a luminous gold color with green and silvery reflections, traversed by a very fine and persistent perlage. The nose opens with white flowers, linden, and honeysuckle, followed by citrus, lemon zest, and pear, with a touch of brioche and a mineral vein that accompanies every scent. On the palate, it is broad and fleshy, as expected from a warm vintage, yet remains tense and precise: the savory freshness balances the richness of the fruit, the mousse is creamy, and the finish, long and saline, leaves a mineral trail that grows with every sip.

At the table, it is an extraordinary companion for oysters, raw seafood, lobster, or baked turbot, but it also knows how to enhance dishes rich in umami, such as a shellfish risotto or an aged cheese. Serve it around 13–15 °C, in a wide white wine glass rather than a flute, so that it can express all its aromas.

My advice? It is already very pleasant today, but its true greatness will be revealed with time: critics suggest waiting at least ten years. A bottle to celebrate an important milestone, or to be kept with care for a toast that is worth the wait.
