wine and environment

The wine cellar of the month is: Fontodi

Our wine cellar of the month is a Tuscan excellency, born in Chianti—a famous area for its wine production and its unique microclimate. The Fontodi company, owned by the Manetti family, produces well-known products since the late 1960s, which are the end result of a careful selection based on a natural and sustainable agriculture. The wine cellar of this organic company (where vinification processed and wood ripening processes take place) is placed on several levels, as to “operate through gravity with an approach that fosters the natural integrity of the grapes”.

A wine cellar that is as detail oriented as Fontodi will certainly produce high-quality wines. An example is Flaccianello della Pieve, year 2016: a 100% Sangiovese of a deep-red color and with an intense fruity aroma. Other scents include flowers and a hint of chocolate, a characteristic that makes it the perfect choice to accompany red meat and aged cheese. Its intense smell, its structured taste, and its velvety texture are the reasons for which Robert Parker has appreciated its undisputed qualities and has given it a grade of 100/100.

A second renowned wine from the Fontodi Wine cellar is the Chianti Classico, Vigna del Sorbo reserve, year 2016. This bottle is immediately recognizable for its wild berries and prune aroma, which create a delicate and minty aftertaste. This is a 90% Sangiovese and 10% Cabernet Sauvignon, with a long finish and elegant tannins.

The third bottle is a Chianti Classico Filetta di Lamole, year 2016. This wine has received awards from Duemila Vini and Gambero Rosso, and is celebrated for two components, in particular: a hint of cranberry and a liquorish scent. Its tannins are balanced yet persistent, so much so that this wine bodes well with game.
