Grapes: Carbernet Franc, Merlot
One of the kings of French wines is the Chateau Ausone. The company was founded in 1786 when Jean Cantenat gave it this name. The name Ausone came from a man that was a poet who lived in that specific area. He was a wine lover and a really important man at that time. It’s located in San Simeon which is one of the best areas for wine production in the world.
The biggest step for this company was made in 1997, when Helen Voiture gave more prestige to this company. Now this company is considered one of the best companies regarding wine production in the world.
The taste of Chateau Ausone
Chateau Ausone is a blend of 2 grapes: 55% Merlot and 45% Cabernet Franc.
The first step is to see the color on the palm of your hand or on a white surface: this is a very clear “ruby red”.
The second step is putting it under your nose: the first impact is a very strong plum scent, and then you will find dark chocolate and dry figs.
The 3rd and last step is tasting the wine with a small sip. This is a superb wine: you will find again the red fruit; it’s easy to find cherry with a good complexity and a very soft mineral and elegant tannin.
Pair Chateau Ausone
Chateau Ausone is the perfect wine to pair with a main course like pasta or cheese. This wine is a baby, so better waiting 4 or 5 more years before drinking it. It’s a wine you can save in your wine cellar for 50 to 100 years without any problem. Cheers!
