The "aged cheese" is the fusion of two ancient traditions, both belonging to Tuscany and Emilia Romagna: it is produced between Faenza and Forli, making the cheese matured in natural caves carved into the tuff and well ventilated. The cheese takes on a different flavor, very intense and fragrant. In the second half of August, the farmers bring their cheese to the owners of the pits, and in early September, the cheeses are ripened, with a technically and difficult processing that only a few skilled workers know. The opening takes place in November: at this point the cheese acquires an inimitable flavor.
